Ingredients
7 ounces Skinny dry egg noodles
3 tablespoons Butter
3 Garlic cloves, minced
¼ cup Scallions, chopped
2 tablespoons Brown sugar
1 teaspoon Fish sauce
1 tablespoon Oyster sauce
Directions
Soak the egg noodles in a bowl of cold water for 2 minutes, then drain completely.
Bring a pot of water to a rolling boil. Place the drained noodles in the boiling water and soak for 3 minutes, then drain well.
Use chopsticks or two forks to separate the noodles gently, ensuring they are well-loosened and not clumped together. Set aside.
Heat the butter in a large wok or sauté pan over medium-low heat. Once melted and foaming slightly, add the minced garlic and chopped scallions. Fry gently for 2–3 minutes, stirring often, until fragrant. Be careful not to let the garlic or scallions brown or burn.
Add the brown sugar, fish sauce, and oyster sauce to the pan. Stir well to combine and dissolve the sugar, cooking for about 1 minute until the mixture is aromatic and cohesive.
Add the drained noodles to the pan and toss gently but thoroughly to coat them evenly with the sauce. Cook for 2 minutes, stirring constantly, until the noodles are heated through and glossy.
Transfer to a serving dish and serve immediately while warm.
