Ingredients
1 pound ground beef
1 egg
1 shallot, minced
2 tablespoons Dijon mustard
2 tablespoons tomato paste
1 tablespoon coconut flour
¼ teaspoon baking soda
½ teaspoon salt
½ teaspoon black pepper
Directions
Preheat your oven to 400°F. In a large mixing bowl, combine the ground beef, egg, and minced shallot together until just blended.
Add the Dijon mustard, tomato paste, coconut flour, baking soda, salt, and black pepper to the bowl. Mix gently with your hands until all ingredients are evenly distributed throughout the meat mixture—avoid overmixing.
Using a ¼-cup measuring scoop, portion out the meat mixture and roll each portion into a compact ball.
Arrange the meatballs on a parchment paper-lined baking sheet, spacing them about an inch apart.
Bake for 25 minutes, or until a meat thermometer inserted into the thickest meatball reads 160°F internally.
Remove from the oven and serve hot. Optional: pair with marinara sauce and vegetable noodles such as spaghetti squash or zucchini noodles.
