Ingredients
1 cup almond milk
1 ripe banana
2 tablespoons natural peanut butter
1 teaspoon raw cacao nibs
1 teaspoon raw honey
1/2 teaspoon vanilla extract
1/2 teaspoon coarse sea salt
1 tablespoon extra-virgin coconut oil (optional)
1/4 cup lactose-free kefir (optional)
Directions
Pour the almond milk into a blender or food processor, then add the ripe banana, peanut butter, cacao nibs, honey, vanilla extract, and sea salt. If using, add the coconut oil and lactose-free kefir.
Blend on high speed for 30 seconds to 1 minute, until the mixture is completely smooth and creamy. Stop and scrape down the sides if needed.
Pour the smoothie into a tall glass and serve immediately while cold.
Comments
This is a legitimately five-minute drink that lives up to its promise—a blender job with no hidden prep. All ingredients are stocked year-round at Harris Teeter, Food Lion, Kroger, and Walmart; kefir and cacao nibs are standard finds at every major chain in Charlotte. At roughly $2.50 to $3.00 per serving, it slots well for a quick breakfast or snack, with the peanut butter and banana doing the heavy lifting. The only caveat is kefir's shelf life—you need to drink within the window before it expires, so it's not a plan-ahead smoothie if you're forgetful about rotation.
