2 tablespoons butter

1/4 cup onion, chopped

1 garlic clove, minced

1 pound zucchini, sliced

2 fresh tomatoes, peeled and diced (or one 16-ounce can diced tomatoes, drained)

1/4 teaspoon salt

Black pepper to taste

1 teaspoon sugar

Directions

  1. Wash your hands thoroughly with soap and water before beginning.

  2. Melt the butter in a medium saucepan over medium heat.

  3. Add the chopped onion and minced garlic to the melted butter and stir to combine.

  4. Sauté the onion and garlic for 5 to 7 minutes, stirring occasionally, until they become soft and fragrant.

  5. Add the sliced zucchini, diced tomatoes (fresh or canned and drained), salt, black pepper, and sugar to the pan. Stir well to combine all ingredients.

  6. Cover the saucepan with a lid, reduce the heat to medium-low, and simmer for 10 to 12 minutes, stirring occasionally, until the zucchini is tender but not mushy. The vegetables should be cooked through with a slight bite to them.
