Ingredients

1¾ cups Low-sodium vegetable broth

1 cup Israeli couscous

to taste Kosher salt

to taste Freshly ground black pepper

3 tablespoons Olive oil

1 Medium shallot, thinly sliced

½ teaspoon Ground turmeric

3 medium cloves Garlic cloves, grated or minced

1 Large eggplant, diced

8 medium Plum tomatoes, cored and roughly chopped

1 teaspoon Hot paprika

1 teaspoon Dried red chili flakes

6 to 8 leaves Fresh basil leaves, chopped

Directions

  1. In a saucepan, bring the vegetable broth to a boil. Add the Israeli couscous and stir well. Reduce heat to low, cover, and simmer until the couscous is tender and the broth is absorbed, about 8–10 minutes. Season with salt and pepper to taste. Set aside and keep warm.

  2. While the couscous cooks, heat the olive oil in a large skillet over medium heat. Add the sliced shallot and sauté until softened and lightly golden, about 2–3 minutes.

  3. Stir in the turmeric and cook for about 30 seconds until fragrant. Add the minced garlic and cook for another 30 seconds, stirring constantly to avoid browning.

  4. Add the diced eggplant to the skillet and cook, stirring occasionally, for about 5–6 minutes until it begins to soften and take on a light golden color.

  5. Add the chopped tomatoes, hot paprika, and dried chili flakes. Stir well to combine. Bring the mixture to a gentle simmer and cook uncovered for about 8–10 minutes, stirring occasionally, until the eggplant is very tender and the sauce has slightly reduced.

  6. Season the eggplant and tomato sauce with salt and pepper to taste. Stir in the chopped fresh basil just before serving.

  7. Divide the couscous among four serving bowls and top each with the warm eggplant and tomato sauce. Serve immediately.
