Cauliflower and Chicken Curry

Ingredients
2 lbs chicken, cut into bite-sized pieces
½ cup vegetable oil
1 cup onion, finely chopped
3 tablespoons fresh ginger, minced
3 tablespoons garlic, minced
2 teaspoons turmeric powder
1 teaspoon ground cumin
3 to 4 fresh red chili peppers, chopped
1 medium head cauliflower, cut into small florets
2 cups water
Salt to taste
Fresh cilantro for garnish
Directions
Heat the oil in a large, heavy-bottomed pan over medium heat. Add the chopped onions and cook until they become soft and translucent, about 3-4 minutes.
Add the minced ginger, garlic, and red chili peppers to the pan. Stir constantly and cook for 1-2 minutes until fragrant, being careful not to burn the aromatics.
Stir in the turmeric powder and ground cumin, mixing well to coat the onion mixture. Cook for another minute to bloom the spices.
Add the chicken pieces to the pan along with salt to taste. Stir well to coat the chicken with the spice mixture. Reduce heat to medium-low and cover the pan.
Cook covered for 5-6 minutes, stirring occasionally to prevent sticking and ensure even cooking. The chicken should begin releasing its juices.
Check that the chicken has reached an internal temperature of 165°F and is tender. Add the cauliflower florets and the 2 cups of water to the pan.
Increase heat to medium and bring the curry to a gentle simmer. Cook uncovered for 10-12 minutes, stirring occasionally, until the cauliflower is tender and the sauce has reduced to your desired consistency.
Taste and adjust seasoning with additional salt if needed. Transfer to a serving dish and garnish generously with fresh cilantro before serving.
