  1. Heat a large pot over medium-high heat. Add the ground pork sausage and cook, breaking it apart with a spoon, until browned and no longer pink (about 5-7 minutes). Internal temperature should reach 160°F. Drain excess fat from the pot.

  2. Add the chopped red onion and minced garlic to the pot. Sauté over medium-high heat, stirring frequently, until the onion becomes translucent and softened (about 3 minutes).

  3. Stir in the chili powder, ground cumin, smoked paprika, salt, and black pepper. Cook, stirring constantly, for about 1 minute until the spices are fragrant and well combined.

  4. Add the fire-roasted tomatoes with their liquid, along with the drained white beans and hominy. Stir well to combine all ingredients.

  5. Reduce heat to medium-low and cover the pot. Simmer for 15-20 minutes, stirring occasionally. The longer cooking time is acceptable and will allow the flavors to develop further.
