Pizza With Zucchini, Feta, Lemon, and Garlic

Ingredients
1 recipe Neapolitan pizza dough, or 2 pounds store-bought pizza dough
1 large zucchini (about 12 ounces), thinly sliced and cut into 1/4-inch-thick matchsticks
2 minced garlic cloves
6 thinly sliced garlic cloves
1 teaspoon kosher salt, plus more for sprinkling
1 pound fresh mozzarella, torn into rough chunks and drained
1 lemon, very thinly sliced, seeds removed
8 ounces goat or sheep's milk feta cheese, roughly crumbled into 1/2-inch pieces
4 tablespoons extra-virgin olive oil, divided
1/2 cup thinly sliced scallions, white and light green parts only
Directions
If using homemade dough, prepare your Neapolitan pizza dough according to your preferred recipe and allow it to rise until doubled in volume. If using store-bought dough, let it come to room temperature for about 30 minutes.
Preheat your oven to 475°F (245°C). If using a pizza stone, place it in the oven while preheating.
Prepare the zucchini topping: In a bowl, toss the zucchini matchsticks with the 2 minced garlic cloves and 1 teaspoon of kosher salt. Let sit for 5 minutes to allow the zucchini to release excess moisture, then pat dry with paper towels.
Stretch or roll the pizza dough to your desired thickness on a lightly oiled surface or parchment paper. Transfer to a pizza peel or baking sheet.
Brush the stretched dough lightly with 1 tablespoon of the olive oil, leaving a border for the crust.
Distribute the torn mozzarella evenly across the dough, leaving small gaps for the other toppings.
Layer the prepared zucchini matchsticks evenly over the mozzarella.
Scatter the sliced garlic cloves over the zucchini, distributing them evenly.
Arrange the lemon slices over the pizza, distributing them throughout. Sprinkle the crumbled feta cheese over the top.
Drizzle the remaining 3 tablespoons of olive oil over the entire pizza. Lightly season with additional kosher salt to taste.
Transfer the pizza to the preheated oven (directly onto the stone if using one, or keep on the baking sheet). Bake for 12-16 minutes, until the crust is golden brown and crispy.
Remove the pizza from the oven and garnish with the sliced scallions. Cool for 1-2 minutes before slicing and serving.
