Ingredients
1 whole wheat tortilla, 10-inch
2 tablespoons low-fat cream cheese
1/2 teaspoon garlic powder
1 cup mixed fresh vegetables, washed and chopped (such as bell peppers, cucumbers, tomatoes, or carrots)
Non-stick cooking spray
Directions
Preheat your oven to 350°F.
Using a variety of cookie cutters, cut out multiple shapes from the whole wheat tortilla. Press the cutters firmly to get clean shapes.
Lightly coat a baking sheet with non-stick cooking spray.
Arrange all the tortilla cutouts on the prepared baking sheet in a single layer.
Bake for 12 to 15 minutes until the tortilla pieces are golden brown and crispy. Remove from oven and allow to cool completely.
While the tortilla shapes are baking, wash and chop your choice of fresh vegetables into small, bite-sized pieces.
In a small bowl, combine the low-fat cream cheese and garlic powder, stirring until well blended and smooth.
Once the tortilla cutouts have cooled, spread a small amount of the garlic cream cheese mixture onto each piece.
Top each appetizer with chopped fresh vegetables, arranging them decoratively.
Serve immediately and enjoy!
