1 teaspoon vegetable oil
1/4 cup onion, chopped (about 1/4 medium onion)
1/4 cup dried cranberries
1 clove garlic, minced (or 1/4 teaspoon garlic powder)
6 cups kale, chopped (leaf portion only, no stems)
1/4 cup freshly squeezed orange juice (about 1/2 orange)
Directions
Wash your hands thoroughly with soap and warm water before beginning.
Heat the vegetable oil in a large skillet over medium-high heat. Add the chopped onion and cook, stirring frequently, until the onion becomes translucent and soft, about 3 to 4 minutes.
Stir in the dried cranberries and minced garlic (or garlic powder). Continue cooking for 2 to 3 minutes, stirring occasionally, until fragrant.
Add the chopped kale to the skillet and mix well with the onion mixture. Pour the freshly squeezed orange juice evenly over the kale.
Continue to stir and cook for about 5 minutes, until the kale is wilted and heated through, and the flavors have melded together.
Transfer to a serving dish and serve immediately while hot.
