1 cup medium onion, chopped

3/4 cup celery, chopped

2 teaspoons garlic, minced

1 1/2 cups low-sodium beef broth

2 cans (15 ounces each) low-sodium black beans, drained and rinsed

1/2 cup thick and chunky salsa

1 1/2 teaspoons ground cumin

1/2 teaspoon onion powder

1/4 teaspoon dried oregano

Directions

  1. Wash your hands thoroughly with soap and warm water before beginning.

  2. Combine the chopped onion, celery, minced garlic, beef broth, drained black beans, salsa, cumin, onion powder, and dried oregano in a medium or large saucepan.

  3. Stir the mixture well to distribute the seasonings evenly. Cover the saucepan with a lid and bring to a simmer over medium heat.

  4. Reduce heat to medium-low and simmer, covered, for 20 to 25 minutes, or until the onions and celery are tender when pierced with a fork.
