  5. Stir in the vanilla extract gently with a spatula until just combined.

  6. Fold in the finely chopped pecans by hand with a rubber spatula until evenly distributed throughout the meringue.

  7. Drop rounded tablespoon-sized portions of meringue mixture onto the prepared baking sheets, spacing them about 1 inch apart.

  8. Bake at 200°F for 1½ to 2 hours, until the meringues are set and beginning to turn light golden.

  9. Turn off the oven and leave the meringues inside for an additional 1½ to 2 hours without opening the door. The residual heat will finish drying them out completely. They should feel very light and crisp all the way through.

  10. Allow the meringues to cool completely to room temperature, then store in an airtight container.
