1 pound whole cleaned squid bodies
Extra-virgin olive oil, for brushing and drizzling
Kosher salt
Freshly ground black pepper
Fresh parsley, chopped, for garnish
Lemon wedges, for serving
Directions
Pat the cleaned squid bodies completely dry with paper towels to promote browning on the grill and ensure even cooking.
Preheat a grill or grill pan to high heat (approximately 450°F). Allow the grate or pan to become very hot before cooking.
Lightly brush each squid body with extra-virgin olive oil on both sides, then season generously with kosher salt and freshly ground black pepper.
Place the squid bodies directly on the hot grill. Cook for 1 to 2 minutes per side until the flesh is opaque and lightly charred. Avoid overcooking, as squid becomes tough with prolonged heat exposure.
