Ingredients

1 cup Fresh strawberries, sliced

12 Fresh mint leaves

⅛ cup Simple syrup

½ Fresh lime juice

4 ounces Light rum

Club soda

Ice cubes

Fresh strawberries (for garnish, optional)

Lime wedges (for garnish, optional)

Fresh mint sprig (for garnish, optional)

Directions

  1. Place the sliced strawberries, mint leaves, simple syrup, and fresh lime juice in a cocktail shaker. Using a muddler or the back of a wooden spoon, gently press and twist the strawberries and mint together to release their flavors and juices.

  2. Fill two glasses with ice cubes, dividing the ice equally between them.

  3. Pour the muddled strawberry and mint mixture evenly into both glasses.

  4. Add 2 ounces of light rum to each glass.

  5. Top each glass with club soda to fill, stirring gently to combine all ingredients.

  6. Garnish each glass with a fresh strawberry, lime wedge, and/or a mint sprig if desired. Serve immediately and enjoy.

Every ingredient is available year-round at any Charlotte grocer—strawberries are common even in winter, and mint, lime, rum, and club soda are staples. The cost per serving runs about $3 to $4 depending on strawberry price and your rum choice, which is reasonable for a cocktail. The stated five minutes is honest; this is pure assembly with no cooking. The real limitation is that mojitos are same-night drinks—they go flat and watered down within an hour—so there are no leftovers, and they demand immediate consumption rather than meal-prep friendly timing.
