1 1/2 cups pumpkin puree

4 large eggs

3 1/2 cups milk or buttermilk

3/4 cup vegetable oil

4 1/2 cups all-purpose flour

2 tablespoons baking powder

1 teaspoon baking soda

2/3 cup packed brown sugar

1 teaspoon ground cinnamon

1 teaspoon ground ginger

1 teaspoon freshly grated nutmeg

1/2 teaspoon ground cloves

1/2 teaspoon salt

Directions

  1. In a medium bowl, whisk together the pumpkin puree, eggs, milk or buttermilk, and vegetable oil until smooth and well combined.

  2. In a large bowl, sift together the flour, baking powder, baking soda, brown sugar, cinnamon, ginger, nutmeg, cloves, and salt. Use a whisk or fork to break up any lumps in the brown sugar and ensure all ingredients are evenly distributed.

  3. Pour the wet mixture into the dry ingredients and gently fold together with a spatula or whisk just until combined. The batter should be slightly lumpy; do not overmix.

  4. Preheat your waffle maker according to its instructions. Lightly grease the waffle plates with oil or cooking spray.

  5. Pour the recommended amount of batter into the waffle maker (typically 1/2 to 3/4 cup, depending on your machine). Close the lid and cook until the waffle is golden brown and crispy, usually 4–5 minutes.

  6. Carefully remove each finished waffle and place it directly onto a wire cooling rack. Allow it to cool completely to room temperature before freezing.

  7. Once all waffles are cooled, arrange them in a single layer on a baking sheet. Cover with parchment or waxed paper, then add a second layer of waffles on top if needed.

  8. Place the entire baking sheet in the freezer and allow the waffles to freeze solid, about 4–6 hours or until firm throughout.

  9. Transfer the frozen waffles into labeled freezer bags, fitting one or two waffles per bag. For best results, remove as much air as possible from the bags before sealing—you can use a straw to gently extract air, then quickly seal the bag.

  10. Return the sealed bags to the freezer, where the waffles will keep for up to 2 months.

  11. To reheat, place a frozen waffle in your toaster and use the defrost setting if available. If your toaster lacks a defrost setting, experiment with a medium-high setting, checking that the waffle is hot throughout (at least 165°F) before serving.
