1/2 cup all-purpose flour

1/2 cup whole wheat flour

3/4 cup rolled oats

1/4 cup wheat germ

1/3 cup light brown sugar

1/4 cup sugar

2 teaspoons baking powder

1/2 teaspoon salt

1 cup low-fat Greek yogurt

1 egg

1/2 cup unsalted butter, melted and cooled

1 cup fresh diced peaches, washed

1 tablespoon cinnamon

Directions

  1. Preheat your oven to 400 degrees Fahrenheit. Prepare a 12-cup muffin tin by inserting paper liners or lightly spraying each cup with cooking spray.

  2. In a large mixing bowl, whisk together the all-purpose flour, whole wheat flour, rolled oats, wheat germ, brown sugar, sugar, baking powder, and salt until evenly combined.

  3. In a separate small bowl, whisk together the Greek yogurt, egg, and melted cooled butter until the mixture is completely smooth and well blended.

  4. Pour the wet ingredient mixture over the dry ingredients and gently stir with a spatula until just combined and no flour streaks remain. Be careful not to overmix.

  5. Fold the diced peaches into the batter using a spatula, distributing them evenly throughout.

  6. Using an ice cream scoop or large spoon, divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.

  7. In a small bowl, mix together the cinnamon and remaining sugar. Sprinkle this mixture evenly over the top of each muffin.

  8. Place the muffin tin in the preheated oven and bake for 16 to 18 minutes, until a toothpick inserted into the center of a muffin comes out clean or with only a few moist crumbs.

  9. Remove the muffins from the oven and allow them to cool in the tin for at least 10 minutes before serving.
