Ingredients

½ cup Water

1½ cups Granulated sugar

¼ cup Fresh lime juice

1 tablespoon Fresh mint, chopped

pinch Salt

6 cups Cantaloupe, honeydew, or seedless watermelon, cut into chunks

1 cup Fresh peaches, chopped

2 cups Red or white seedless grapes, halved

1 pint Fresh strawberries, cleaned and quartered

2 cups Fresh blackberries, blueberries, or raspberries

Directions

  1. Combine water and sugar in a medium saucepan over medium-high heat. Bring to a boil, stirring frequently until the sugar is completely dissolved and the syrup becomes clear, about 3-5 minutes. Remove from heat and let cool slightly.

  2. Stir the lime juice, half of the chopped mint, and salt into the warm syrup. Set the dressing aside at room temperature to cool completely.

  3. While the syrup cools, prepare all the fruit. Wash, peel, and cut the melon into bite-sized chunks. Chop the fresh peaches, halve the grapes, quarter the strawberries, and gather the blackberries or raspberries. Transfer all the fruit to a large mixing bowl.

  4. Sprinkle the remaining fresh mint over the fruit and toss gently to combine.

  5. Pour the cooled lime and mint syrup over the fruit and gently toss everything together until the fruit is evenly coated. Cover and refrigerate for at least 2 hours, or until the salad is well chilled.

  6. Before serving, give the salad a gentle toss. Transfer to a serving bowl or individual cups and serve chilled. Store any leftovers in the refrigerator in a covered container.
