1 seedless watermelon (about 3.5 pounds), cut into chunks

1 cup fresh mint leaves, loosely packed

½ cup fresh lime juice

¼ cup simple syrup

1 cup light rum

Ice, as needed

Fresh lime slices for garnish (optional)

Fresh mint sprigs for garnish (optional)

Fresh watermelon slices for garnish (optional)

Directions

  1. Process the watermelon chunks in a blender or juicer until completely smooth. For a clearer juice, strain the mixture through a fine-mesh sieve to remove pulp, then measure out approximately 3 cups of watermelon juice.

  2. Add the fresh mint leaves, lime juice, and simple syrup to a large pitcher filled with ice. Gently stir and lightly bruise the mint to release its aromatic oils, then continue stirring until all ingredients are well combined.

  3. Pour the light rum and prepared watermelon juice into the pitcher. Stir thoroughly to combine all components evenly throughout the mixture.

  4. Pour the mojito mixture into serving glasses filled with fresh ice. If desired, garnish each glass with fresh lime slices, mint sprigs, and watermelon slices before serving.
