Ingredients

2 medium tomatoes, diced

1 mango, peeled, seeded, and diced

1 avocado, peeled, pitted, and diced

⅓ cup fresh cilantro, chopped

½ medium jalapeño pepper, seeded and minced

2 tablespoons minced red onion

1 tablespoon fresh lime juice

½ teaspoon salt

Directions

  1. Cut the tomatoes in half, remove excess seeds and juice, then dice into ½-inch cubes. Peel the mango, remove the pit, and cut into ½-inch cubes.

  2. Cut the avocado in half lengthwise, remove the pit, and scoop the flesh into a cutting board. Dice into ½-inch cubes.

  3. Finely chop the fresh cilantro. Seed the jalapeño pepper and mince finely. Mince the red onion into small pieces.

  4. Place the diced tomatoes, mango, avocado, cilantro, jalapeño, and red onion into a medium bowl.

  5. Pour the fresh lime juice over the mixture and sprinkle with salt.

  6. Gently fold and toss all ingredients together until evenly combined. Serve immediately or cover and refrigerate for up to 2 hours before serving.
