Traditional Eastern European cheese pancakes made with farmer's cheese, eggs, and flour, then pan-fried until golden and crispy. Serve warm, optionally with sour cream or jam.

Ingredients

400 grams Farmer's cheese

2 Eggs

½ cup All-purpose flour

2 tablespoons Sugar

½ teaspoon Salt

½ cup Vegetable oil for frying

as needed All-purpose flour for dusting

Directions

  1. Heat vegetable oil in a small skillet or wok over medium-low heat. While the oil is warming, whisk together the farmer's cheese, eggs, flour, sugar, and salt in a bowl until well combined.

  2. Using a 1-inch cookie scoop or spoon, portion the cheese mixture onto a lightly floured work surface, creating 16 portions. Lightly dust the top of each portion with flour and gently flatten with your fingers or the bottom of the scoop into a small patty about 1/2 inch thick.

  3. When the oil is hot, carefully place 5 syrniki into the pan. Fry for 2 to 3 minutes on the first side until golden brown and crispy, then flip and fry the second side for 2 to 3 minutes until golden. Repeat with remaining batches.

  4. Transfer fried syrniki to paper towels to drain excess oil. Serve warm.
