Ingredients

4 medium baking potatoes

3/4 cup low-fat cottage cheese

1/4 cup 1% low-fat milk

2 tablespoons soft tub margarine

1 teaspoon dill weed

3/4 teaspoon herb seasoning

1/4 teaspoon hot pepper sauce, or to taste

2 tablespoons Parmesan cheese

Directions

  1. Preheat your oven to 425°F. Wash the baking potatoes thoroughly under cold running water and pat them dry with paper towels.

  2. Using a fork, prick each potato several times on all sides to allow steam to escape during baking.

  3. Place the pricked potatoes directly on the oven rack and bake for 60 minutes, or until a fork inserted into the thickest part meets no resistance and the potato is completely tender.

  4. Remove the potatoes from the oven and allow them to cool slightly until they can be handled safely. Once cooled, slice each potato in half lengthwise.

  5. Using a spoon, carefully scoop out the soft potato flesh from each half, leaving approximately 1/2 inch of the potato flesh attached to the skin to form sturdy shells.

  6. Transfer all the scooped potato flesh to a large mixing bowl.

  7. Add the low-fat cottage cheese, 1% milk, soft margarine, dill weed, herb seasoning, and hot pepper sauce to the mashed potato. Stir and blend all ingredients together until the mixture is smooth and creamy. Taste and adjust seasonings as desired.

  8. Divide the filling evenly among the potato shells, mounding the mixture gently into each half.

  9. Sprinkle the Parmesan cheese evenly over the top of each stuffed potato half.

  10. Arrange the filled potato halves on a baking sheet, cut side up.

  11. Return the baking sheet to the preheated 425°F oven and bake for 15 to 20 minutes, until the Parmesan topping turns golden brown and the filling is heated through.

  12. Remove from the oven and serve warm.
