Ingredients
4 salmon filets, 5–6 ounces each
1 cup roasted, unsalted pistachios, shelled
1 large egg white, lightly beaten
Directions
Place the shelled pistachios in a food processor and pulse until the mixture resembles coarse breadcrumbs. Transfer to a shallow bowl or plate.
Pat the salmon filets dry with paper towels. This helps the egg white adhere properly.
Pour the beaten egg white into another shallow bowl. Dip each salmon filet into the egg white, coating both sides lightly.
Press each coated filet into the pistachio crumbs, pressing gently so the coating adheres evenly on all sides. Place on a parchment-lined baking sheet.
Preheat the oven to 400°F (200°C).
Place the baking sheet in the oven and bake for 12–14 minutes, until the salmon reaches an internal temperature of 160°F (63°C) at the thickest part and the pistachio crust is golden brown.
Remove from the oven and let rest for 2 minutes before serving.
