Ingredients

2 cups simple syrup

1 cup celery, minced

1/2 cup fresh pineapple cubes

1/2 cup pineapple juice

1/2 cup plain yogurt

Directions

  1. In a large mixing bowl, combine the simple syrup with the minced celery, stirring well to distribute the celery pieces evenly throughout the syrup.

  2. Add the fresh pineapple cubes to the mixture, ensuring they are fully submerged in the syrup.

  3. Pour in the pineapple juice and stir to combine all liquid ingredients with the fruit and celery.

  4. Whisk in the plain yogurt until the mixture is smooth and uniform, with no lumps remaining.

  5. Pour the mixture into an ice cream maker or freezer-safe container. If using an ice cream maker, follow the manufacturer's instructions to churn and freeze until the sorbet reaches the desired creamy consistency, approximately 20–30 minutes. If freezing in a container, place it in the freezer and stir every 30 minutes for 3–4 hours until scoopable.

  6. Once frozen to your preferred firmness, divide the sorbet into 5 serving portions and serve immediately, or store in a covered freezer container for up to one week.
