Ingredients

2½ to 3 pounds Yukon Gold potatoes

1 small red onion, finely diced

6 to 7 small Polish dill pickles, medium dice

6 to 7 tablespoons mayonnaise

4 teaspoons Dijon mustard

Salt, to taste

Black pepper, to taste

Directions

  1. Bring a large pot of salted water to a boil. Add the Yukon Gold potatoes and cook until fork-tender, approximately 15–20 minutes depending on size. Drain well and let cool slightly until they can be handled comfortably.

  2. Once cooled, peel the potatoes and cut them into bite-sized cubes. Transfer to a large mixing bowl.

  3. Add the finely diced red onion and the medium-diced dill pickles to the bowl with the potatoes.

  4. In a small bowl, whisk together the mayonnaise and Dijon mustard until well combined.

  5. Pour the mayonnaise mixture over the potato mixture and gently toss until all ingredients are evenly coated.

  6. Season with salt and black pepper to your taste, then toss gently to distribute the seasonings. Serve immediately or refrigerate until ready to serve.
