2 teaspoons vegetable oil

1 cup chopped onion

4 medium potatoes, diced with skin on (about 2 cups)

1 1/2 cups yellow split peas

5 1/2 cups low-sodium chicken broth

1 cup water

1/2 teaspoon onion powder

1 teaspoon poultry seasoning

Directions

  1. Wash your hands thoroughly with soap and water before beginning.

  2. Pour the vegetable oil into a large pot or Dutch oven and place over medium-high heat.

  3. Once the oil is hot, add the chopped onion and sauté for 2 to 3 minutes, stirring occasionally, until the onion turns golden and softens.

  4. Add the diced potatoes, yellow split peas, chicken broth, water, onion powder, and poultry seasoning to the pot. Stir well to combine all ingredients.

  5. Increase the heat and bring the mixture to a boil, stirring occasionally.

  6. Once boiling, reduce the heat to low and maintain a gentle simmer, leaving the pot uncovered.

  7. Continue cooking for approximately 45 minutes, stirring occasionally, until the split peas are completely tender and have begun to break down, thickening the soup.

  8. Serve the soup hot in bowls and enjoy.
