Ingredients
1 pound red jalapeños, stemmed and roughly chopped
8 medium cloves of garlic, peeled
3/4 cup water
1/3 cup white vinegar
2 tablespoons palm sugar
2 teaspoons kosher salt
Directions
In a food processor or blender, combine the chopped red jalapeños and peeled garlic cloves. Blend until you reach a coarse paste consistency.
Pour the jalapeño-garlic mixture into a small saucepan and add the water, white vinegar, palm sugar, and kosher salt.
Bring the mixture to a gentle simmer over medium heat, stirring occasionally. Simmer for about 8–10 minutes until the flavors meld and the sauce thickens slightly.
Remove from heat and allow to cool to room temperature. The sauce will continue to thicken as it cools.
Transfer to a clean jar or bottle for storage. Use as a condiment or dipping sauce with your favorite dishes.
