Ingredients

3 Boneless, skinless chicken breasts

2 Tbsp Olive oil

1 Tbsp Italian seasoning

1 Tbsp Grated Parmesan cheese

1 cup Marinara or traditional pasta sauce

4 slices Mozzarella or provolone cheese slices

4 Hoagie-style buns

4 leaves Fresh basil leaves (optional)

Directions

  1. Combine the olive oil, Italian seasoning, and grated Parmesan cheese in a small bowl, stirring until well blended.

  2. Brush the herb-oil mixture evenly over both sides of each chicken breast, coating them thoroughly.

  3. Preheat an outdoor grill or indoor grill pan to medium-high heat. Place the chicken breasts on the grill and cook for 6-8 minutes per side, until the internal temperature reaches 165°F and the meat is cooked through, showing no pink.

  4. While the chicken cooks, lightly toast the hoagie buns on the grill or in a toaster until the edges just begin to brown and crisp.

  5. Transfer the cooked chicken to a cutting board and slice into strips, approximately 1/2-inch thick.

  6. Heat a grill pan or sauté pan over medium-low heat. Add the chicken strips and pour 2/3 cup of the marinara sauce over them. Stir gently to coat and cook for 1-2 minutes.

  7. Arrange the mozzarella or provolone cheese slices over the chicken and sauce. Cover the pan and continue cooking until the cheese is completely melted, about 1-2 minutes.

  8. Using a wide spatula, carefully transfer the cheesy chicken mixture onto the toasted hoagie buns.

  9. Top each sandwich with additional marinara sauce and garnish with shredded fresh basil leaves if desired. Serve immediately while warm.

A straightforward sandwich that plays to Charlotte's easy access to Italian basics—all ingredients available at Harris Teeter, Food Lion, Kroger, or Walmart without a special trip. Realistically plan 50 to 55 minutes once you account for pounding chicken, heating marinara, and letting the sandwiches sit briefly after grilling so the cheese sets; the stated 45 minutes skips prep and resting. Cost per serving lands around $3.50 to $4.00 driven by chicken breast and fresh mozzarella, a reasonable weeknight expense. This is a forgiving, hands-on-the-stove dish that feeds a family of four and reheats reasonably well the next day, though the bun softens—best eaten fresh.
