Ingredients
1 large egg white
2 tablespoons sugar
4 cups pecan halves
1 tablespoon kosher salt
2 teaspoons cayenne pepper
2 teaspoons sweet paprika
2 teaspoons Creole seasoning
Directions
Preheat your oven to 325°F. Line a large baking sheet with parchment paper.
In a large bowl, whisk the egg white until foamy and well combined.
Add the sugar to the foamy egg white and stir until the sugar begins to dissolve and the mixture becomes sticky.
In a separate small bowl, combine the kosher salt, cayenne pepper, sweet paprika, and Creole seasoning.
Add the pecan halves to the egg white mixture and toss until all nuts are evenly coated.
Sprinkle the spice mixture over the coated pecans and toss again until every nut is thoroughly covered with the Creole spice blend.
Spread the seasoned pecans in a single layer on the prepared baking sheet.
Roast in the preheated oven for 25 to 30 minutes, stirring occasionally every 8 to 10 minutes to ensure even browning and prevent burning.
Remove from the oven when the nuts are fragrant and the coating is dry and slightly darkened. Cool completely on the baking sheet before serving; the nuts will crisp up as they cool.
