Ingredients

1 whole chicken (3½ to 4 pounds), giblets removed

1 medium onion, sliced

1½ pounds new potatoes, halved

1 tablespoon olive or vegetable oil

Kosher salt to taste

Black pepper to taste

Directions

  1. Preheat your oven to 425°F. Pat the chicken dry with paper towels and place it breast-side up in a large roasting pan.

  2. Rub the chicken all over with the olive oil, then season generously inside and out with kosher salt and black pepper.

  3. Scatter the sliced onion and halved potatoes around the chicken in the roasting pan, tossing them lightly with a pinch of salt and pepper.

  4. Roast in the preheated oven for 60 to 70 minutes, stirring the potatoes and onions halfway through cooking, until the chicken reaches an internal temperature of 165°F at the thickest part of the thigh (not touching bone), and the potatoes are tender and golden.

  5. Remove from the oven and let rest for 5 minutes before carving. Serve the chicken with the roasted potatoes and onions.
