4-5 lbs pork shoulder butt roast, excess fat trimmed

1 teaspoon garlic powder

1 teaspoon paprika

1 teaspoon fresh thyme, chopped (or dried)

½ teaspoon dried sage

1 teaspoon salt

½ teaspoon black pepper

½ cup balsamic vinegar

½ cup tomato sauce

1 adobe chipotle pepper, minced

¼ cup honey

1 cup yellow onion, chopped

Directions

  1. Trim any excess fat from the pork shoulder roast and pat the meat dry with paper towels. In a small bowl, combine garlic powder, paprika, thyme, sage, salt, and black pepper. Generously rub the dry spice mixture over all sides of the pork.

  2. Transfer the seasoned pork to a large slow cooker. In a medium bowl, whisk together balsamic vinegar, tomato sauce, minced chipotle pepper, and honey until well combined.

  3. Pour the balsamic-honey mixture over the pork. Distribute the chopped yellow onion evenly over the top and around the pork.

  4. Cover the slow cooker and cook on HIGH for 6 hours, until the pork is very tender and pulls apart easily with a fork.

  5. Carefully remove the cooked pork from the slow cooker using tongs and place on a cutting board. Using two forks, shred the meat into bite-sized pieces, removing any remaining large fat deposits. Return the shredded pork to the slow cooker and stir thoroughly to coat with the cooking liquid and sauce.

  6. Serve the pulled pork with the sauce spooned over the top. Accompany with white or brown rice for a gluten-free option, or with cauliflower rice for a paleo-compliant meal.
