Ingredients
1 box Brownie mix
1 Large egg
⅓ C Vegetable oil
½ C (1 stick) Butter
½ C Light brown sugar
½ C Granulated sugar
2 tsp Vanilla extract
1¾ C All-purpose flour
¼ C Vanilla pudding mix
½ tsp Salt
½ tsp Baking soda
1 bag Circus Animal Cookies
½ C Crushed Circus Animal Cookies
¼ C Rainbow sprinkles
Directions
Preheat your oven to 350°F. Line a 9x13 inch baking pan with parchment paper or a silicone baking mat for easy removal.
In a medium bowl, combine the brownie mix, one large egg, and vegetable oil. Mix thoroughly until the brownie batter is well combined and smooth.
Pour the brownie mixture evenly into the prepared pan and spread it in an even layer.
Arrange whole Circus Animal Cookies over the brownie batter, spacing them about ½ inch apart.
Soften the butter in the microwave for 10–15 seconds until it reaches a spreadable consistency.
In a separate large bowl, combine the softened butter, light brown sugar, and granulated sugar. Beat until the mixture is smooth and fluffy.
Add one large egg and vanilla extract to the sugar mixture. Beat until the egg is fully incorporated and the mixture is well combined.
In another bowl, whisk together flour, vanilla pudding mix, salt, and baking soda.
Gradually add the dry flour mixture to the butter mixture, mixing on low speed until just combined.
Place a handful of Circus Animal Cookies in a plastic bag and crush them into small pieces using a rolling pin or by hand.
Once all the flour has been added, increase mixer speed to medium and beat until a cohesive cookie dough forms.
Fold the rainbow sprinkles and crushed Circus Animal Cookies into the cookie dough until evenly distributed.
Drop spoonfuls of the cookie dough onto the brownie and cookie layer, gently pressing the pieces into the brownie batter.
Bake for 23–25 minutes at 350°F, until the topping is set and lightly golden.
Remove from the oven and allow the brookies to cool completely before cutting. If using a baking mat, you can lift the entire sheet out of the pan for easier cutting.
