Ingredients

1 1/2 tablespoons vegetable oil

1 1/4 cups celery, finely chopped, with leaves

1 1/2 cups onion, finely chopped

1 cup water

1/2 cup orange juice

2 tablespoons lemon juice

1 dash hot sauce

1 cup long-grain white rice, dry

1/4 cup slivered almonds

Directions

  1. Wash your hands thoroughly with soap and warm water before beginning to prepare this dish.

  2. Heat the vegetable oil in a medium-sized saucepan over medium heat until it is shimmering and hot.

  3. Add the finely chopped celery (including the leaves) and onion to the hot oil, stirring frequently, and sauté for about 10 minutes until both vegetables are very tender and fragrant.

  4. Pour in the water, orange juice, lemon juice, and hot sauce, stirring to combine all the liquid ingredients.

  5. Increase the heat to medium-high and bring the liquid mixture to a rolling boil.

  6. Stir in the dry white rice, mixing well to ensure each grain is moistened. Return the mixture to a boil.

  7. Reduce the heat to low, cover the saucepan tightly with a lid, and let the rice simmer undisturbed for about 18–20 minutes, until all the liquid is absorbed and the rice grains are tender.

  8. Remove the saucepan from heat and stir in the slivered almonds, fluffing the rice gently with a fork as you fold them in.

  9. Serve immediately while warm as a bright, citrusy side dish alongside your favorite fish entrée or other main course.
