Ingredients
2 large Potatoes, large, boiled, peeled, and cut into cubes
2 tablespoons Oil
½ teaspoon Mustard seeds
½ teaspoon Cumin seeds
2 Green chilies, finely chopped
5 Curry leaves
½ cup Onion, chopped
¼ teaspoon Turmeric powder
pinch Asafoetida (hing)
Salt, to taste
pinch Sugar
2 teaspoons Lemon juice
few sprigs Fresh cilantro, finely chopped
Directions
If starting with whole potatoes, boil them until fork-tender, then peel and cut into bite-sized cubes. Prepare all other ingredients by chopping the cilantro, green chilies, and onion, and measuring out the spices.
Pour the oil into a medium saucepan or skillet and heat over medium heat until shimmering, about 1-2 minutes.
Add the mustard seeds and allow them to crackle and pop, which should take about 30 seconds to 1 minute.
Once the mustard seeds have popped, add the cumin seeds and let them sizzle for about 30 seconds until fragrant.
Stir in the chopped green chilies and curry leaves, cooking for about 1 minute until they release their aromas.
Add the turmeric powder and asafoetida, stirring quickly to combine with the oil. This prevents the spices from burning.
Immediately add the chopped onion along with a pinch of salt. Cook, stirring occasionally, for about 5-7 minutes until the onions become soft and light golden brown.
Add the cubed potatoes, adjusting the salt to your taste, and sprinkle in a pinch of sugar. Stir gently to combine all ingredients.
Continue cooking for another 2-3 minutes, stirring carefully so the potatoes heat through without breaking apart.
Remove from heat, drizzle with lemon juice, and sprinkle the fresh cilantro on top. Give it one final gentle toss and serve immediately.
