Ingredients
3/4 lb. smoked andouille sausage
3/4 lb. kielbasa
3/4 lb. smoked turkey sausage
1/4 cup extra-virgin olive oil
1/2 lb. American cheese
1/2 lb. sharp cheddar cheese
1/2 lb. jalapeño cheddar cheese
1 cup pimento cheese, homemade or store-bought
1/2 lb. green olives
1/2 lb. pepperoncini
1/2 cup barbecue sauce
1/2 cup spicy mustard
1/2 cup hot honey
1/2 lb. pickled okra
24 saltine crackers
Paprika for garnish
Directions
Slice all three sausages into 1/2-inch-thick rounds. Heat the olive oil in a large cast-iron skillet over medium heat. Working in batches to avoid crowding the pan, arrange the sausage slices in a single layer and pan-fry, turning occasionally, until browned and heated through, about 6 to 7 minutes. Transfer to a serving board as each batch finishes.
Cut the American cheese, sharp cheddar, and jalapeño cheddar into 1/2-inch-thick slices. Transfer the pimento cheese to a small serving bowl.
Pour the olives, pepperoncini, barbecue sauce, spicy mustard, and hot honey into separate small bowls. Arrange all components on a large serving platter or board: the cooked sausages, cheese slices, pimento cheese bowl, small bowls of condiments and pickled vegetables, pickled okra, and saltine crackers.
Sprinkle paprika over the cooked sausages and cheese slices for added color and flavor. Serve immediately to 6 guests.
