Ingredients
6 bananas, sliced lengthwise
3 tablespoons packed brown sugar
4 tablespoons unsalted butter or margarine
1/2 cup raisins or other dried chopped fruit
1/3 cup chopped pecans
Directions
Preheat your oven to 350°F. Lightly coat a 9x13 inch baking pan with cooking spray or oil.
Wash the bananas under cool water and pat dry. Slice each banana lengthwise down the middle to expose the flesh, but keep the peel intact on one side if possible for structure.
Arrange the split bananas in a single layer in the prepared baking pan, skin-side down or flat in the pan.
Sprinkle the brown sugar evenly over all the bananas. Dot with small pieces of butter or margarine, distributing them throughout.
Scatter the raisins and chopped pecans evenly over the top of the bananas.
Bake uncovered for 30 minutes, until the bananas are tender and the topping is warm and fragrant.
Remove from the oven and let cool for 2-3 minutes before serving.
