Ingredients
1 cup old-fashioned rolled oats
1 cup spelt flour
¾ cup cooked quinoa
2 tbsp coconut palm sugar
¼ tsp salt
¼ tsp baking soda
¼ tsp ground cinnamon
¼ cup pure maple syrup
½ cup unsweetened applesauce
¼ cup melted coconut oil
1 tsp pure vanilla extract
½ cup strawberry jam
Directions
Preheat your oven to 325°F (163°C). Lightly grease an 8x8-inch baking pan with coconut oil or cooking spray.
In a large mixing bowl, combine the rolled oats, spelt flour, cooked quinoa, coconut palm sugar, salt, baking soda, and ground cinnamon. Mix until all the dry ingredients are evenly distributed.
Pour in the maple syrup, applesauce, melted coconut oil, and vanilla extract. Stir everything together until well combined and a wet crumb mixture forms.
Measure out ½ cup of the oat mixture and set it aside. Press the remaining oat mixture firmly and evenly into the prepared baking pan to form the base layer.
Spread the strawberry jam evenly over the pressed oat base using a spoon or spatula.
Crumble the reserved ½ cup of oat mixture and sprinkle it over the strawberry jam, distributing it as evenly as possible.
Bake for 35 minutes, until the top is lightly golden and set.
Allow the bars to cool completely on a wire rack before cutting into 12 to 16 pieces. Store in an airtight container in the refrigerator.
