Ingredients

1/4 cup raw sugar

2 tablespoons water

1/2 cup Irish whiskey, divided

4 tablespoons chilled heavy whipping cream, divided

1/2 teaspoon peaty Scotch whisky, divided

1/4 teaspoon orange-flower water, generously divided

2 cups ice cubes, divided

Directions

  1. In a heavy-bottomed small saucepan over medium heat, combine the raw sugar and 2 tablespoons of water. Stir constantly until the sugar fully dissolves and the mixture comes to a gentle simmer. Remove from heat and allow the syrup to cool to room temperature.

  2. Pour 2 tablespoons of the cooled sugar syrup into a cocktail shaker. Add 1/4 cup of the Irish whiskey, 2 tablespoons of the chilled heavy cream, 1/4 teaspoon of the peaty Scotch, and a generous 1/8 teaspoon of the orange-flower water.

  3. Add 1 cup of ice cubes to the shaker and cover it tightly. Shake vigorously for at least 30 seconds to chill the drink and incorporate air into the mixture.

  4. Pour the contents of the shaker, including the ice, into a chilled tumbler. This completes the first cocktail.

  5. Repeat the process with the remaining 2 tablespoons of sugar syrup, 1/4 cup of Irish whiskey, 2 tablespoons of heavy cream, 1/4 teaspoon of peaty Scotch, a generous 1/8 teaspoon of orange-flower water, and 1 cup of ice cubes to create the second drink.
