Ingredients

1 pound cooked, peeled shrimp, coarsely chopped

4 cups crusty multigrain bread cubes, preferably day-old, cut into 1/2-inch pieces

4 large ripe but firm tomatoes, coarsely chopped

2 large bell peppers (green, red, and/or yellow), diced

1/4 cup sliced pitted Kalamata olives

1/4 cup Kalamata olive brine

3 tablespoons red-wine vinegar

4 tablespoons extra-virgin olive oil, divided

1 clove garlic, peeled and halved

1 1/2 teaspoons fresh thyme, chopped, or 3/4 teaspoon dried thyme

3/4 cup fresh parsley, chopped

1/4 cup fresh chives, chopped

4 cups mixed salad greens

Freshly ground pepper to taste

Directions

  1. In a small bowl, whisk together the red-wine vinegar, olive brine, and 2 tablespoons of the extra-virgin olive oil. Add the halved garlic clove and thyme, stirring well to combine. Let the dressing sit for 5 minutes to allow the flavors to develop.

  2. Heat the remaining 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the bread cubes and toast, stirring frequently, until they turn golden and crispy on all sides, about 5 to 7 minutes. Season lightly with pepper. Transfer to a large salad bowl.

  3. Add the chopped tomatoes, diced bell peppers, Kalamata olives, and cooked shrimp to the bowl with the toasted bread cubes.

  4. Pour the vinegar dressing over the salad and gently toss to combine, making sure all ingredients are well coated. Add the fresh parsley and chives, and toss again.

  5. Let the panzanella sit for 10 to 15 minutes to allow the bread to absorb the dressing flavors. This can be served warm or at room temperature.

  6. To serve, arrange the mixed salad greens on plates or a serving platter, and top with the shrimp panzanella mixture. Season individual portions with additional freshly ground pepper to taste.
