Ingredients

1 pound ground pork

1½ tablespoons granulated sugar

1 tablespoon fish sauce

1 tablespoon soy sauce

½ teaspoon baking soda

11 garlic cloves, minced

1 Fresno chile, stemmed, seeded, and minced

1 inch piece fresh ginger, peeled and minced

3 tablespoons soybean oil

7 tablespoons chili bean paste

2 tablespoons sweet bean sauce

1½ cups chicken stock, divided

¾ cup spicy chili crisp

2 teaspoons cornstarch

1 pound fresh lo mein noodles

Directions

  1. In a medium bowl, combine the ground pork, sugar, fish sauce, soy sauce, and baking soda. Mix thoroughly until well combined and set aside to marinate while you prepare the remaining ingredients.

  2. Using a mini food processor, finely mince together the 11 garlic cloves, Fresno chile, and ginger into a paste-like consistency.

  3. Heat the soybean oil in a medium saucepan over medium-high heat. Once shimmering, add the garlic-chile-ginger paste and cook, stirring frequently, until fragrant, about 1 minute.

  4. Stir in the chili bean paste and sweet bean sauce, cooking while stirring often until the oil begins to separate from the paste, about 2 to 3 minutes.

  5. Add the marinated pork to the saucepan and cook, breaking it apart with a wooden spoon as it cooks, until the meat begins to brown and caramelize, 4 to 5 minutes. The pork should reach an internal temperature of 165°F.

  6. Pour in all but 1 tablespoon of the chicken stock, scraping the bottom of the pan to release any browned bits. Bring the mixture to a boil, then stir in the spicy chili crisp. Keep warm on low heat.

  7. In a small bowl, whisk together the remaining 1 tablespoon of chicken stock with the cornstarch until smooth. Pour this mixture into the boiling sauce and stir constantly until slightly thickened, about 2 minutes. Remove from heat and keep warm.

  8. Bring a large pot of water to a rolling boil. Add the fresh lo mein noodles and cook until tender, approximately 4 minutes. Drain the noodles well.

  9. Divide the cooked noodles among four serving bowls or plates. Top each portion with an equal amount of the pork sauce and serve immediately.
