2 tablespoons lard

1 onion, sliced into half rings

1 pound loose chorizo

1 red bell pepper, diced

1 yellow bell pepper, diced

1 cup sliced baby mushrooms

1 head broccoli, cut into florets

Sea salt, to taste

Black pepper, to taste

Directions

  1. Heat the lard in a large skillet over medium heat until it shimmers.

  2. Add the sliced onions to the hot skillet and sauté for about 3 minutes, stirring occasionally, until the onions become translucent and just beginning to soften.

  3. Add the loose chorizo to the skillet, breaking it apart with a spoon as it cooks. Continue cooking for 5-7 minutes, stirring frequently, until the chorizo is browned and cooked through.

  4. Add the red bell pepper, yellow bell pepper, mushrooms, sea salt, and black pepper to the skillet. Stir well to combine and sauté for 3 minutes, stirring occasionally, until the peppers begin to soften.

  5. Stir in the broccoli florets and continue cooking for 3-5 minutes, stirring occasionally. Cook for 3 minutes for tender-crisp broccoli or up to 5 minutes if you prefer it softer.

  6. Transfer the chorizo stir fry to a serving dish and enjoy immediately.
