Smoky Spanish Green Beans with Garlic and Jamón

Ingredients
¼ cup kosher salt, plus more to taste
⅓ cup extra-virgin olive oil, plus more for serving
4 garlic cloves, sliced thin
3½ oz. serrano ham or prosciutto, finely chopped
2 tsp. smoked Spanish paprika (pimentón), plus more for garnish
2 Tbsp. sherry vinegar, plus more to taste
1½ lb. fresh or frozen romano or green beans
1 Tbsp. fresh lemon juice
Directions
Bring a large pot of water to a boil and add ¼ cup kosher salt. If using fresh beans, trim the ends and add them to the boiling water; if using frozen, add directly to the water. Cook until just tender, about 5–7 minutes for fresh beans or 3–4 minutes for frozen. Drain well and set aside.
While the beans cook, heat ⅓ cup extra-virgin olive oil in a large skillet over medium heat. Add the sliced garlic and cook gently, stirring occasionally, until pale golden and fragrant, about 2–3 minutes. Be careful not to brown the garlic too much.
Add the chopped serrano ham to the skillet and stir to combine with the garlic and oil. Cook for 1–2 minutes, allowing the ham to warm and its flavors to meld into the oil.
Sprinkle the smoked paprika over the garlic and ham mixture, stirring constantly for about 30 seconds to toast the spice and release its aroma without burning it.
Add the drained beans to the skillet and toss gently to coat evenly with the infused oil, garlic, ham, and paprika. Cook for 2–3 minutes, stirring occasionally, until the beans are heated through and well combined.
Remove from heat and drizzle the sherry vinegar and fresh lemon juice over the beans. Toss gently to combine. Taste and adjust seasoning with additional salt, vinegar, or paprika as desired.
Transfer to a serving dish and drizzle with a little more extra-virgin olive oil if desired. Garnish with a light dusting of smoked paprika and serve warm or at room temperature.
