The meat is seared until golden, seasoned with chili powder, cumin, and garlic, then cooked under pressure to retain its moisture and achieve an ideal texture. Finished with a brief rest to ensure optimal tenderness.

Ingredients

1 lb. pork tenderloin

1 tbsp. extra-virgin olive oil

Salt and black pepper to taste

2 tsp. chili powder

0.5 tsp. ground cumin

0.25 tsp. garlic powder

1 cup water

Directions

  1. Slice the pork tenderloin in half crosswise to create two pieces. Season both pieces generously with salt and black pepper on all sides.

  2. Set your Instant Pot to the Sauté function and add the olive oil. Allow the oil to heat until it shimmers, approximately 1–2 minutes.

  3. Carefully place the seasoned pork pieces into the hot oil and sear them for about 6 minutes total, turning as needed, until they develop a golden-brown crust on all sides.

  4. Transfer the seared pork to a clean plate. Sprinkle the chili powder, ground cumin, and garlic powder evenly over all surfaces of the pork and set aside.

  5. Press the Cancel button on the Instant Pot to turn off the Sauté function. Insert the trivet (metal steamer rack) into the pot and carefully pour in 1 cup of water.

  6. Place the spiced pork pieces on the trivet above the water. Close the lid and lock it securely.

  7. Set the Instant Pot to high-pressure mode for 5 minutes. Allow the pot to come to pressure naturally.

  8. When the timer completes, allow the pressure to release naturally for 1 minute, then carefully turn the pressure release valve to quick-release any remaining steam.

  9. Carefully open the lid away from your face. Remove the pork and let it rest for 5 minutes. Slice against the grain before serving. The internal temperature should reach 145°F.
