1 can (15.5 oz) low-sodium white beans, drained and rinsed
1 cucumber, peeled and diced into ½-inch pieces
¼ red or white onion, finely chopped
2 tablespoons vegetable oil
¼ cup fresh lemon juice
1 tablespoon dried basil or dried parsley

¼ teaspoon black pepper
Directions
In a large mixing bowl, combine the diced cooked chicken, drained and rinsed white beans, diced cucumber, and chopped onion.
In a small bowl, whisk together the vegetable oil, lemon juice, dried basil (or parsley), salt, and black pepper to create the dressing.
