Ingredients

1.5 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon fine salt

3 tablespoons sugar

1/4 teaspoon nutmeg

2 large eggs, at room temperature

1.25 cups whole milk

4 tablespoons unsalted butter, melted

1/4 teaspoon vanilla extract

Directions

  1. In a large mixing bowl, whisk together the flour, baking powder, salt, sugar, and nutmeg until well combined.

  2. In a separate medium bowl, beat the eggs until well combined, then add the milk, melted butter, and vanilla extract. Stir until fully incorporated.

  3. Pour the wet ingredients into the dry ingredients and stir until just combined. The batter should be slightly lumpy; do not overmix.

  4. Heat a griddle or non-stick skillet over medium heat and lightly butter or oil the surface.

  5. Pour about 1/4 cup of batter onto the hot griddle for each pancake. Cook until bubbles form on the surface and the edges appear set, about 2-3 minutes.

  6. Flip each pancake and cook the other side until golden brown, about 1-2 minutes more.

  7. Transfer cooked pancakes to a plate and repeat with remaining batter. Serve warm with your choice of toppings.
