Ingredients
2½ cups All-purpose flour
1 teaspoon Baking soda
½ teaspoon Salt
1 cup (2 sticks) Salted butter, softened
¼ cup Granulated sugar
1 cup Packed brown sugar
3 teaspoons Vanilla extract
1½ Whole egg plus 1 egg yolk
¾ cup Creamy peanut butter
2 tablespoons Honey
5 ounces Milk chocolate chunks
1 cup Reese's Pieces candy
Directions
Preheat your oven to 350 degrees Fahrenheit. Line two large baking sheets with parchment paper and set aside.
In a small bowl, whisk together the flour, baking soda, and salt. Set the dry mixture aside.
In a large mixer bowl, beat together the softened butter, granulated sugar, brown sugar, and vanilla extract until the mixture becomes light and creamy, approximately 3 to 5 minutes.
Add the whole egg and egg yolk to the butter mixture and beat until well combined and fully incorporated.
Beat in the peanut butter and honey until the mixture is smooth and evenly blended throughout.
Gradually add the flour mixture to the wet ingredients, beating on low speed until just combined and no streaks of flour remain.
Fold in the milk chocolate chunks and Reese's Pieces candy using a spatula or wooden spoon until evenly distributed throughout the dough.
Roll the dough into small balls, each approximately one tablespoon in size. Stack two balls together and place them on the prepared baking sheets, spacing them about two inches apart.
Bake for 10 to 12 minutes until the edges are lightly golden but the centers still appear slightly underbaked. Do not over-bake, as this will dry out the cookies.
Remove the baking sheets from the oven and allow the cookies to cool on the pan for 3 minutes. Enjoy them warm, or transfer to a cooling rack to cool completely.
