Ingredients
1 ripe honeydew melon (about 5 pounds), seeded and cut into 1-inch chunks
1 seedless cucumber (3/4 to 1 pound), peeled and coarsely chopped
1/2 cup fresh lime juice
1 cup ice cubes
2/3 cup coconut sorbet
1/4 cup fresh mint leaves
Pinch of salt
Directions
In a blender, combine about 2/3 of the honeydew chunks, 2/3 of the chopped cucumber, and 1/3 cup of the lime juice. Blend on high until completely smooth. Pour into a large pitcher.
Add the remaining honeydew chunks, remaining cucumber, and remaining lime juice to the blender. Blend on high until completely smooth.
Add the ice cubes and coconut sorbet to the blender. Blend on high until smooth and well combined.
Add the fresh mint leaves and a pinch of salt to the blender. Pulse until the mint is finely chopped and evenly distributed throughout.
Pour the mint-blended mixture into the pitcher with the reserved honeydew base and stir well to combine.
Divide the frappe among 6 glasses and serve immediately while cold and frothy.
