Ingredients

3 ripe but firm bananas

2 tablespoons sugar

1 tablespoon margarine

¼ teaspoon ground cinnamon

Directions

  1. Place the sugar, margarine, and cinnamon in a large heavy-bottomed skillet or pan. Heat over medium heat, stirring occasionally, until the mixture melts and begins to bubble, approximately 2–3 minutes. This creates a caramel base.

  2. While the caramel heats, peel the bananas and cut them into chunks approximately 2–3 inches long. Once the caramel is bubbling, carefully add the banana pieces to the pan.

  3. Allow the bananas to cook in the caramel for 1 minute on the first side until they begin to soften and absorb the caramel flavor. Using a gentle spatula or spoon, carefully turn each piece over to cook the second side for another minute.

  4. Turn the banana pieces once more and gently tilt the pan, spooning the caramel sauce over the top of each piece to coat thoroughly. Cook for an additional 30 seconds, then remove from heat.

  5. Divide the caramelized bananas and sauce among three serving bowls or plates. Top each portion with a scoop of your preferred ice cream and serve immediately while warm.
