Ingredients
2 eggs, lightly beaten
1/4 cup all-purpose flour
2 cups fresh corn kernels
1 green onion, thinly sliced
1/2 jalapeño, seeded and finely chopped
1/2 teaspoon kosher salt
2 tablespoons grated parmesan cheese
Oil for frying
1/2 cup sour cream, for serving
1 lime, cut into wedges, for serving
Directions
In a food processor, combine the beaten eggs, flour, grated parmesan cheese, and kosher salt. Pulse until the ingredients are well combined and the mixture resembles wet sand.
Add the fresh corn kernels, sliced green onion, and chopped jalapeño to the food processor. Pulse 2 to 3 times, just until the ingredients are loosely incorporated—do not overmix, as the batter should still have some texture.
Heat oil in a large nonstick skillet over medium heat until shimmering, about 1 to 2 minutes. Working in batches, carefully drop heaping tablespoonfuls of batter into the hot oil, spacing them so they do not crowd the pan.
Cook the fritters for approximately 4 minutes on the first side until they turn golden brown and crispy. Flip carefully and cook for another 3 to 4 minutes on the second side until they are evenly browned and heated through.
Transfer the cooked fritters to a paper towel-lined plate and season lightly with additional kosher salt while still warm.
Serve the fritters warm with sour cream for dipping and lime wedges on the side for brightness.
