Grilled Chicken Skewers with Spicy Peanut Sauce and Sweet Chile-Soy Condiment

Ingredients
2 boneless, skinless chicken breasts, cut into 1-inch by 3-inch strips, or 5 boneless, skinless chicken thighs, cut into 1-inch cubes
2 cloves garlic, peeled and minced
1 teaspoon salt
2 pinches freshly ground white pepper
2 tablespoons kecap manis (sweet soy sauce)
1 Juice of 1 lime
Directions
Combine the minced garlic, salt, white pepper, kecap manis, and lime juice in a medium mixing bowl. Stir until the salt dissolves completely and the marinade is evenly blended.
Add the chicken pieces to the marinade bowl and toss gently until all pieces are thoroughly coated. Cover and refrigerate for at least 15 minutes, or up to 2 hours for deeper flavor development.
While the chicken marinates, soak wooden skewers in water for 10 minutes to prevent charring, or use metal skewers if available.
Preheat your grill to medium-high heat (about 400°F). If using a grill pan or outdoor grill, allow it to heat for 5 minutes.
Thread the marinated chicken pieces onto the prepared skewers, dividing them evenly among 8 to 12 skewers depending on size. Reserve any remaining marinade.
Place the chicken skewers on the hot grill and cook for 5 to 7 minutes on the first side without moving them, allowing a light char to develop. Rotate the skewers 90 degrees and cook for another 3 to 4 minutes.
Flip the skewers and cook the second side for 4 to 6 minutes, rotating once midway through cooking for even charring. The chicken is done when the internal temperature reaches 165°F on an instant-read thermometer inserted into the thickest piece.
Transfer the cooked skewers to a serving platter. Brush lightly with any reserved marinade (discard any marinade that has contacted raw chicken). Let rest for 2 minutes before serving.
