Mom's Pink Dip

Ingredients
8 ounces cream cheese, softened
10 ounces can diced tomatoes with green chilies, well drained
1 teaspoon fresh lemon juice
Directions
Place the softened cream cheese in a medium bowl. If the cream cheese is cold, let it sit at room temperature for 10–15 minutes to soften, or microwave it in 15-second intervals until easily mixable.
Open the can of diced tomatoes with green chilies and pour the contents into a fine-mesh strainer or colander. Press gently with the back of a spoon to remove as much liquid as possible, ensuring the mixture is well drained.
Add the drained tomatoes and green chilies to the cream cheese in the bowl.
Stir in the fresh lemon juice.
Using a wooden spoon or sturdy whisk, blend the ingredients together until well combined and creamy. The mixture should have a uniform pink color with visible flecks of tomato and green chili.
Transfer to a serving bowl or small dip container. Serve immediately at room temperature or warm in a slow cooker on the LOW setting for 1–2 hours, stirring occasionally.
